Camping Recipe: The Best Campfire Avocado Toast

Are you looking for the perfect way to start your day at the campground, or any day for that matter? Check out the best campfire avocado toast camping recipe below. You will love that this recipe is easy to make and gives you all the nutrients you need to start your day.

Ingredients

Recipe adapted from one on FreshOffTheGrid.com

8 slices bacon, cut in half
8 slices bread
4 egg
4 avocado
Salt + pepper
Everything But the Bagel seasoning
Capers
Sun-dried tomatoes

Instructions:

Build a strong campfire and set the grill grate over the fire once it is burning well.
Using a cast-iron skillet, cook the bacon over medium heat. Flip occasionally to get it nice and crispy.
Once the bacon is cooked through and crispy, remove it from the skillet and set aside to drain on a paper towel.
Using the bacon, grease, brush it over each of the bread slices on both sides. Save the remaining bacon grease in a small container for cooking the eggs later.
Once the skillet is hot again, add the toast until both sides are browned, then remove from the heat and set aside.
Add in some of the remaining bacon grease that you saved, and cook the eggs to your liking. I recommend cooking over-medium where all but the yolk is solid, but you get that nice creamy center.
When you’re ready to build your sandwiches, cut the avocados in half, and scoop the insides into a small bowl. Mash until creamy, then smoothed over each of the pieces of toast.
Top with bacon and egg, season with salt and pepper, and add a sprinkle of everything but the bagel seasoning, capers, or sun-dried tomatoes to your liking.
